Caught off the coast of Canada, our Canadian Hardshell Lobster reflects its terroir, or environment, with a distinctly refreshing taste of the usually cold waters. The colder temperatures of the water typically result in the shells of these lobsters being thicker than their counterparts fished in, for example, Maine. One result is that they tend to hold up slightly better once taken out of water. 

With their slightly briny taste that is also sweet and tender, the Canadian Hardshell Lobster can be enjoyed steamed and lightly salted, or with a dabble of lemon or lime. Terrific paired with sea urchin or uni, especially in the spring and summer.
